Eco Hotel Announces Chinampa Taqueria Grand Opening in Tagaytay

Eco Hotel is excited to announce the opening of its third restaurant venture, Chinampa Taqueria. The green hotel chain has recently been trying its luck in the food industry, with this Mexican restaurant as its latest brainchild. The grand opening is set on October 31st, 2018 at 6 PM in Cabins by Eco Hotel, Tagaytay.

Chinampa is the first passion project by Chef Elgin Alonso upon returning to the Philippines. Elgin was previously the Sous Chef at the Ritz Carlton Dubai, and came back home to Manila earlier this year. He wanted to introduce authentic Mexican cuisine to the Filipino palette, and after surveying the Tagaytay food scene discovered that this was exactly what was missing.

The roof deck at Cabins by Eco Hotel provides a quaint and unique location for this taqueria, with its unobstructed view of Taal lake and an open-air set up to enjoy the chilly Tagaytay weather. It’s a great way to enjoy classic Mexican dishes, such as soft tacos and burritos. Appetizers like Nachos and Chili Dynamite match perfectly with a cold beer.

Food is prepared fresh daily by Chef Elgin, as he also caters to the in-house guests. Chinampa offers Huevos Rancheros, a Mexican breakfast staple, for that extra authentic kick. The taqueria is open for lunch and dinner as well, Tuesdays to Sundays.

Eco Hotel would like to invite everyone to join us in opening Chinampa this Halloween! We will have live acoustic performances by popular local bands Lenses, Hilera and Autotelic. For only PHP 150 entrance fee, guests will get a free beer and unlimited nachos while supplies last.

For details and reservations, please visit www.ecohotels.com.ph or contact Millie Manahan, at 0927 673 7674..

Follow Chinampa on Facebook and Instagram @chinampaph. We hope to see you there! Andale, andale!

ONE HAPPY PLACE - Hakata Ikkousha Manila

I hit a jackpot in finding a happy place here at Festival Mall Alabang... Where? Well it is in Hakata Ikkousha Manila which is located in Festival Mall New Wing... It was almost 10 years since I had my last visit here in Festival and that had this awesome development in their mall and one of them is HAKATA IKKOUSHA MANILA, where of course, as I said  I found my happiness...  It was an indeed a very much of a blessing for me to have this opportunity to visit this place... I really need to be happy and they have given me this certain happiness the minute I entered the place...
Image may contain: Summer Rain Drew, smiling
HAKATA IKKOUSHA is locted at Filinvest Alabang Festival Mall New Wing... You would love to find your own happiness in this place... like I did!
Upon entering the place, I was greeted by smiles and welcoming Japanese greetings by the staff... Who could be not all out smiling when people around you were smiling too?... I was catered by the owner herself, Mam Marivic. As in wow! Only a few owners I know who would cater guests personally to make sure that everyone is having a happy stay in her HAKATA IKKOUSHA MANILA...  I love her hospitality, courteousness and kindness as she served us everything we needed, together with her staff...

HAKATA IKKOUSHA MANILA is a very cozy place to dine in for a bowl of ramen. I love the smell and the ambiance is so welcoming enough to feel happy and at the same time to feel like you are in Japan...

I was served with gyoza, Stellina lemonade, tea and my ramen - SPECIAL GOD FIRE. my gyoza serving was very delicious indeed... they were in bite size and so I don't have to worry about spilling the goodness... only in here I have this kind of serving which indeed was so flavorful with lots of onions within. I love their house tea too... It would remind you of how one should be serve in Japanese way.

My SPECIAL GOD FIRE was a very wow thing for me... It was in a huge bowl teeming with lots of everything you deserve in  an authentic RAMEN... My  tonkatsu broth was so flavorful that I have to ask how was it done... and so Mam Marivic told us the story behind this... They had to boil the tontaksu bones for 2 days... and that 2days itself is awesome enough to indulge with eyes close in every time I had slurped the fine thin noodles and sipped the broth that was served to me... everything is worth the value of what I have in my pocket... Sumptuous enough to be happy all day... :)  As in sobrang sarap!  I really would love you to try and have the safe happiness I had when I finished the whole huge bowl for myself... :)

This is what they call BLACK FIRE... Rich in flavor of black sesame, garlic and a little bit of spiciness in there authentic tonkatsu borth...

Image may contain: food
This is my bowl of fire god...  Look at that tonkatsu broth as it was bounty with delicate soft boiled egg, mushroom, spring onions and meat... HAPPY MOM here :)

My pretty bite size gyoza! Awesome indeed!

I can't help myself but to have the huge bowl by myself!

The East-West Seed Innovation Olympics 2017- The Answer to Our Plant Breeding Poverty

I was in high school when I first came in University of the Philippines in Los Banos, Laguna.  I was one of the Science Club members of our school, who was very fortunate to be included in a tour and presentation of different kinds of rice seeds that said to be the answer for the certain poverty we had then... so that we won't be importing rice from other country... so that Filipinos won't suffer... I was so amazed to see such triple the size of our NFA rice with multiple color by then...I used to tell my son how much I really want him to see UPLB International Rice Research Institute as he takes pictures of the rice fields and farms to make him eager to learn more of the seeds he had been collecting all these times...

I  and my kid got invited witness a one of kind competition... The East-West Innovation Olympics 2017 was where our next generation's agricultural leaders were challenged to come up with such great innovative technology solutions for small vegetables farmers. This year's theme, "New Technologies to Improve the Productivity of Vegetable Farmers"  made these future leaders sought for real life solutions with the use of technology. Technology today is the most demanding tool for everyone and East-West Seed, as one of the largest vegetables seed companies in the world, made used technology for the good of our smallholder farmers. How warm it is to know that there are still like East-West Seed who would think of the smallholder farmers all these 35 years since 1982. The core values of  "Learning and Innovation" made this competition a success in getting more people to be aware and get involved in making their own actions of helping and serving smallholder farmers and the people who depend on our farmers...

This five-day event  came up with the best 10 finalists as listed below:

  1. Agrissive: Potent Agrochemical formulation organic Resources and Wastes (University of the Philippines Los Banos) This two in one agrochemical solution is both pesticide and fertilizer which can be a convenient tool for assuring the farm producers and the consumers the quality and safe consumption of the produce. A promising source income for  the community.
  2. Agriviz (Asian Institute of Management) This aims to improve the productivity and profitability of Filipino vegetable farmers through agricultural e -commerce platform.
  3. Aton Umahan (Ateneo de Manila University) "Aton Umahan" means "Our Farms" in Waray-Waray. Such a business model where trash-based organic farming initiative with direct farm to restaurant channel can provide farmers market access, income stability and diversity in thier crops.
  4. i-Agri Ventures (University of the Philippines Los Banos) KAMATIS: "Kagamitang Makabago, Teknolohiyang at Impormasyong Sigurado" is what tomato farming needs with its goal to provide an affordable, effective and sustainable means of increasing tomato productivity through monitoring the soil moisture content which addressed other solutions to the tomato farming
  5. Laguna Sangre ( University of the Philippines Los Banos) Graco Gulayman: "Sa Gulay Tayo Magpayaman" is about the improvement of utilization of animal wastes as fertilizers in the farming systems technologies.
  6. Light AgriTech (University of the Philippines Los Banos) With the objective of saving water and improving crop production, "Smart Solar-Powered Irrigation System" is an answer for automatic irrigation of a vegetable farm.
  7. Project Minerva (University of the Philippines Los Banos) With the use artificial intelligence, micro controllers and sensors for automatic innovation farmers will have that aquaponic system with no worries.
  8. Team Oppa (University of the Philippines Los Banos) by utilizing different sensors and data, this simple technology will inform the farmers all the details of his vegetable farm though SMS.
  9. Tinderow (University of the Philippines Los Banos) This is an online platform which could be a convenient and efficient transaction process between the buyers and the farmers minus the middlemen.
  10. Vegetrack (University of the Philippines Los Banos) Such vegetable tracking system that will give you everything you need to know about the vegetables from seed to table for the consumers.
As I write my first individual blog, I was being wowed by these future leaders not only of our country but of our world. All of these farming projects and solutions deserved all first prize. They are all promising and really worth something for all farmers, as well as, the consumers. But they have to chose the best among the best.

September 29, 2017, The last day of the East- West Seed Innovation Olympics 2017 at REDREC AUDITORIUM, UPLB, was the most awaited event of the week. A simple Welcome Remarks by Dr. Prof. Normito R. As I said before, I am very fortunate to be part of this event. You made me dream as a mom that someday I would be seeing my own kid competing in one of your Innovation Olympics that will aim to help and serve our farmers through the core value of learning and innovating. As he shared his experience to the day's event, thank me. he said wants to be like the finalists who had be thinking out of box of the impossible things yet made come true as real life solutions. Thank you for helping me make my kid decide what he really wanted to be someday with an essential purpose to mankind.
